Using Moonlight German Lager Yeast (MOG‑203) from Mogwai Labs, a Bavarian heritage strain that promotes maltiness with a mild ester profile, the fermentation stays clean and refined while letting the malt complexity shine.\u003c\/p\u003e\n\u003cp\u003eOn the nose, expect cocoa, dark chocolate, toffee apple, pear, maraschino cherry, and faint bit of banana.
