Now, fast forward to today, and that same adventurous spirit is bottled up in Novocastrian Rum. Master distiller Lucas Cattell crafted this smooth rum from fermented treacle and let it age for over two years in ex Port barrels. Even though it's got a strong cask strength of 55% ABV, it's as smooth as a calm day on the water.
